
Rocket salad with oven goat cheese
Ingredients:
1 round goat cheese
1 hand full of walnuts
honey
provencal herbs
olive oil
salt & pepper
250g rocket salad
100g tomatoes
125g tiny mozzarella balls
pine nuts
2 tablespoon Balsamico vinegar
4 tablespoon olive oil
1 tablespoon mustard
Preparation:
Oven goat cheese:
Pre-heat the oven to 200 degrees top and bottom heat
cut the goat cheese in half and put it in a ovenproof dish -> put the cut side up
drizzle it with some olive oil and then spice it with salt, pepper and the provencal herbs
cut the walnuts into small pieces and spread it on top of the goat cheese and finally put some honey on it
put it in the oven for about 20 minutes
Rocket salad:
wash the salad, tomatoes and mozzarella
cut the tomatoes and the mozzarella in halves and put to the rocket salad
for the dressing mix olive oil, balsamic vinegar, mustard and one tablespoon of honey together and pour it over the salad
for the final touch, roast pine nuts gently and sprinkle it over the salad
