Potato Salad à la Genovese
1kg hard cooking potatoes
125g green pesto
5 tablespoon white wine vinegar
400ml vegetable broth
400g green beans
salt & pepper
Start with cooking the potatoes.
While potatoes are cooking cut the onion in small cubes and braise them lightly.
Deglaze them with the vegetable broth, let it cook for one minute and spice it with the wine wine vinegar, salt and pepper.
When it is spiced put it aside.
When the potatoes are cooked peel them cut them into slices and mix it with the vegetable broth.
Mix it thoroughly and put it aside for ca. 1 hour.
While the potatoes soak the vegetable broth wash and cook the beans.
When the hour is finished put the beans in the bowl where the potatoes are and insert the pesto.
Mix it up and let it sit again for ca. 20 minutes.
After 20 minutes stir everything and now it is ready to serve.
Tip -> You can add Parmesan if you like to or make your own pesto.
